Franks And Corn Fritters
- 1 1/2 c. flour
- 3 tsp. baking powder
- 2 tsp. chili powder (optional)
- 3/4 tsp. seasoned salt
- 1 egg, beaten
- 1 c. milk
- 1 Tbsp. shortening, melted
- 1 can whole kernel corn, drained
- 4 frankfurters, finely chopped (1 1/3 c.)
- shortening for deep frying
- catsup
- mustard
- In a bowl, combine the flour, baking powder, chili powder (optional) and seasoned salt.
- Combine the egg, milk and melted Crisco.
- Add to dry ingredients with the drained corn and chopped frankfurters.
- Stir just until moistened.
- Drop batter by tablespoons into heated shortening, a few at a time, until golden brown (about 3 to 4 minutes), turning once.
- Drain on paper toweling.
- Serve with catsup and mustard.
- Makes about 24 fritters.
