Black Beans (And Rice)
- 1 lb dried black beans, soaked overnight (turtle beans)
- 1 large green pepper, halved
- 6 cups water
- 1 large onion, chopped
- 4 garlic cloves (or more)
- 1 green pepper, chopped
- 4 teaspoons salt
- 12 teaspoon pepper
- 14 teaspoon oregano
- 1 teaspoon cumin
- 2 bay leaves
- 2 tablespoons sugar
- 23 cup olive oil
- 2 tablespoons vinegar
- Soak the beans overnight.
- Cook (covered) beans, water, and halved green pepper for 1 hour in a large pot.
- Remove halved green pepper, and put in rest of ingredients.
- Simmer for 2 hours or until ready to serve.
- Serve with rice.
- Optional:.
- Top with green onions and shredded cheese.
- Or serve with nachos or flour tortilla with cheese.
