Grilled mahi mahi with pineapple salsa recipe
- 1 cup diced pineapple
- 0.5 cups diced red onion
- 0.25 cups minced green bell pepper
- 0.25 cups minced red bell pepper
- 0.25 bunch cilantro
- 1 tbsp white wine vinegar
- 0.25 tsp hot pepper sauce
- 1 pinch salt, to taste
- 900 g (31.7oz) mahi mahi or other firm-fleshed fish
- 2 tbsp olive oil
- 1 pinch pepper, to taste
- Combine the pineapple, red onion, green bell pepper, and red bell pepper in a large bowl.
- Chop the cilantro and add it to the bowl.
- Add the vinegar, hot sauce, and a pinch of salt.
- Stir well, taste, and add more salt if needed.
- Prepare your grill.
- Coat the fish with olive oil and season with pepper.
- Place on hot grill.
- Let cook for 3-4 minutes per side or until fish is opaque.
- Top with pineapple salsa and serve.
