Pork Spare Ribs
- 500 grams Pork spare ribs (with bones intact)
- 1 pinch Salt
- 1 Pepper (coarsely ground black pepper is best)
- 1/2 Onion
- 1 tsp Ground ginger
- 1 tsp Garlic (grated)
- 3 tbsp Sake
- 2 tbsp Sugar
- 1 tbsp Mirin
- 2 tbsp Soy sauce
- 4 tbsp Ketchup
- 1 tbsp Sesame oil
- Grate the onions.
- Cut 2 notches into thicker pork cuts with a knife, place into double bagged plastic bags, and season with salt and pepper.
- Add the grated onions and all of the sauce ingredients into the bag, mix well, and pour into the bag with the seasoned meat.
- Rub by hand, close the bag and let it sit for half a day or overnight in the fridge.
- Heat a frying pan, and pour in all of the ingredients from the plastic bag.
- Flip it over occasionally, reduce from a medium to a low heat covered with a lid, and cook through all the way for about 10-15 minutes.
- After 15-20 minutes has passed, remove the lid, turn up to high heat, and lightly evaporate the water.
- After the sauce has boiled down, transfer to a plate, and it is done.
