Chickamauga Chewies
- 1 c. margarine, softened
- 1 c. quick oats, uncooked
- 1 c. sugar
- 1 c. brown sugar
- 2 c. self-rising flour
- 1 tsp. vanilla
- 2 eggs, beaten
- 1 c. Rice Krispies
- 1 c. shredded coconut
- 1 c. chopped pecans
- 6 oz. butterscotch chips or morsels
- Preheat oven to 350u0b0.
- Cream margarine and sugars.
- Sift flour and beat into creamed mixture.
- Beat in eggs, one at a time.
- Add oats, Rice Krispies, coconut, pecans and butterscotch chips; mix well.
- Add vanilla and stir.
- Chill in refrigerator for several hours.
- Drop by rounded teaspoonfuls onto cookie sheet.
- Bake for 8 to 12 minutes.
- Bake less for chewy cookies and more for crisp cookies.
- Yield:
- 100 cookies.
