Mocha Shortbread

  1. Preheat oven to 300F.
  2. Combine flour and cocoa in large bowl.
  3. Combine coffee and vanilla extract in large mixer bowl.
  4. Stir until coffee is dissolved.
  5. Add butter, 1/2 cup sugar and salt; beat until comvined.
  6. Add flour mixture; mix just until incorporasted.
  7. Press dough into ungreased 9-inch tart pan with removable bottom or 9-inch round cake pan.
  8. Bake for 55-60 minutes or until firm.
  9. Sprinkle with 2 teaspoons sugar.
  10. Cool in pan on wire rack for 5-10 minutes; cut into wedges.
