Traditional Jamaican Christmas Cake Recipe

  1. Store and stew prunes with sugar to taste, then chop fine.
  2. Stone dates and chop fine.
  3. Cut all fruit very fine, except currants.
  4. Place all fruit in a large jar, omitting nuts.
  5. Pour liquor on fruit and steep for at least 1 month.
  6. Cream butter and sugar.
  7. Add in beaten Large eggs.
  8. Sieve together flour, bread crumbs, baking pwdr and salt and add in.
  9. Add in burnt sugar for color, say a Tbsp.. Add in minced nuts.
  10. Taste, and if a sharper taste of liquor is required, add in some brandy, wine, liqueur or possibly rum to taste.
  11. Pour batter into a well greased and heavily lined baking tin or possibly cake basin.
  12. Cover tightly and steam for at least 4 hrs.
  13. The cake may also be best, covered, in a 250 degree oven and baked for at least 4 hrs.
  14. Serve with brandy sauce.
