Shrimp Salad(Camarones En Salpicon)

  1. Wash shrimp thoroughly.
  2. Bring water to a boil in large saucepan.
  3. Add 1 tablespoon of lime juice, bay leaf, peppercorns and 1/2 teaspoon salt.
  4. Drop shrimp into boiling water.
  5. Cook 4 minutes.
  6. Drain shrimp, reserving liquid.
  7. Peel shrimp; slit backs and remove veins.
  8. Place shrimp in large bowl.
  9. Cover with reserved water; chill.
  10. Before serving, drain shrimp thoroughly.
  11. Mix drained shrimp with chile, tomato, green onions and cilantro. Sprinkle with 1 tablespoon lime juice and salt and pepper to taste. Stir.
  12. Arrange lettuce leaves on 4 plates.
  13. Spoon shrimp mixture evenly onto lettuce leaves.
  14. Mound 1 tablespoon of mayonnaise beside shrimp; garnish with lemon wedge.
