Graham Cracker Pudding
- 2 cups graham cracker crumbs
- 1 cup mini marshmallows
- 1 cup chopped walnuts
- 12 cup confectioners' sugar
- 1 cup coconut (optional)
- 12 cup crushed pineapple, drain and reserve 1/2 C juice
- 1 teaspoon vanilla
- 12 cup whipping cream
- In large mixing bowl, mix graham cracker crumbs, marshmallows, walnuts, confectioners sugar, coconut, pineapple, vanilla and reserved pineapple juice thoroughly.
- Line 9x5" dish with waxed paper and pack mixture into tray.
- Freeze until firm.
- Slice with warm knife.
- Whip cream and top each serving.
