My Simple Pancakes with Soft, Fluffy Centres
- 120 grams Cake flour
- 10 grams Katakuriko
- 1 tsp Baking powder
- 3 tbsp Sugar
- 1 dash Salt
- 1 Egg
- 85 ml Milk
- 1 Vanilla extract
- 1 Butter
- 1 Syrup
- Place the bowl on a scale and add the cake flour, katakuriko, baking powder, sugar and salt.
- Remove from the scale and use a whisk to mix in a circular motion.
- Add the egg and mix.
- Put the bowl back on the scale and add the listed amount of milk.
- Remove, mix, and add vanilla extract if desired.
- Once everything has been mixed together, warm a frying pan over a low-medium heat and coat with some some vegetable oil (or butter).
- Drop the batter into the pan in rounds.
- Once the top starts to bubble, turn over.
- Cook on both sides to golden brown.
- If you can insert a skewer into the pancakes several times and it always comes out clean, they're done.
- Serve with butter and syrup.
