My Simple Pancakes with Soft, Fluffy Centres

  1. Place the bowl on a scale and add the cake flour, katakuriko, baking powder, sugar and salt.
  2. Remove from the scale and use a whisk to mix in a circular motion.
  3. Add the egg and mix.
  4. Put the bowl back on the scale and add the listed amount of milk.
  5. Remove, mix, and add vanilla extract if desired.
  6. Once everything has been mixed together, warm a frying pan over a low-medium heat and coat with some some vegetable oil (or butter).
  7. Drop the batter into the pan in rounds.
  8. Once the top starts to bubble, turn over.
  9. Cook on both sides to golden brown.
  10. If you can insert a skewer into the pancakes several times and it always comes out clean, they're done.
  11. Serve with butter and syrup.
