Lemon Squares
- 2 1/4 c. flour
- 1/2 c. confectioners sugar
- 1 c. reduced-calorie unsalted oleo
- 4 eggs
- 1/2 tsp. baking powder
- 1/2 c. granulated sugar
- 1/2 c. frozen orange juice, thawed
- 1/4 Tbsp. plus 1 tsp. lemon zest
- 1/2 tsp. vanilla
- 1/4 c. lemon juice
- In a medium bowl, stir together 2 cups flour and 1/4 cup plus 2 tablespoons confectioners sugar.
- Cut oleo into mixture until crumbly.
- Pat dough into a 10-inch nonstick pan.
- Bake at 350u0b0 until set (10 to 15 minutes).
- In a medium bowl, beat remaining flour, baking powder, granulated sugar, orange juice, lemon juice and zest, vanilla and eggs.
- Pour over crust and bake 12 to 15 minutes or until top is set.
- Cool.
- Sprinkle with remaining confectioners sugar.
- Cut into 48 squares.
