Sweet Corn Tomalito- Vegetarian
- 5 tbsp butter
- 1/4 cup sugar
- 1/4 cup corn flour
- 1/4 cup milk
- 1 tsp baking powder
- 1/2 cup corn meal
- 1/2 tsp salt
- 1 cup corn kernels, fresh, frozen or canned
- 2 cup pureed fresh corn kernels or canned cream corn
- This side dish is appropriate for lacto-vegetarians.
- Preheat oven to 350F
- Cream butter and sugar in a large mixing bowl.
- Work corn flour into mixture until moist
- Add milk, salt, baking powder and cornmeal to mixture.
- Stir until ingredients are moist.
- Add pureed corn and corn kernels, stir until mixed thoroughly.
- Put mixture into 8x8 baking pan.
- Nest pan with mixture in a 13x9 pan and add water to the larger pan until half full.
- Cover the pans with foil, place in oven and bake for 75 minutes.
- Check to ensure baking is complete.
- Remove from oven.
- Allow to cool to a suitable temperature before serving.
