Fish in Roasted Red Pepper Sauce
- 4 white fish fillets (1 lb./450 g), such as halibut, cod or tilapia
- 1/4 cup flour
- 1/4 cup Italian dressing
- 1/2 cup sliced onions
- 60 g (about 1/4 of 250-g pkg.) Philadelphia Brick Cream Cheese, softened
- 1/4 cup roasted fresh red peppers
- 1/4 cup chicken broth
- 1 clove garlic
- 2 Tbsp. chopped fresh cilantro
- Coat both sides of fish fillets with flour.
- Heat dressing in large skillet on medium-high heat.
- Add onions; cook and stir 5 min.
- or until crisp-tender.
- Add fish; cook 5 to 7 min.
- on each side or until fish flakes easily with fork.
- Meanwhile, blend cream cheese, red peppers, broth and garlic in blender until smooth; pour into saucepan.
- Bring to boil on medium-high heat, stirring frequently; simmer on low heat 5 min., stirring occasionally.
- Serve fish topped with cream cheese sauce and cilantro.
