Carry-Out Casserole
- 1 (8 oz.) pkg. wide noodles, cooked and drained
- 2 lb. ground beef
- 2 c. cottage cheese
- 1/4 c. diced green pepper
- 1/4 c. chopped ripe olives
- 2 c. tomato sauce
- 1 c. sour cream
- 1/4 c. chopped onion
- 2 Tbsp. flour
- salt and pepper to taste
- Saute onion and green pepper; set aside.
- Brown beef; add flour.
- Combine beef, vegetables and tomato sauce; simmer for 10 minutes.
- Season with salt and pepper.
- Add remaining ingredients and divide into two 9 x 13-inch pans or large casserole dishes. (This freezes well, so one casserole can be saved for a future time.)
- Bake at 350u0b0 for 30 minutes.
- Makes 16 servings.
- This is an excellent casserole for potlucks and large groups.
