Bacon Wrapped Pulled Pork and Cream Cheese Stuffed Anaheim Peppers and Sausage and Peppers Rice
- 4 packages bacon
- 2 packages cream cheese
- 2 packages pulled pork (already prepared)
- 20 large Anaheim Peppers (deseeded)
- 1 1/2 box minute rice
- 2 packages italian sausage mild
- 2 large red and green bell peppers (diced)
- 1 large white onion (diced)
- 1 can beef broth
- 1 cup water
- First cut off tops of anaheims and de-vein and de-seed peppers
- Then start scooping pulled pork and cream cheese into peppers in equal parts
- After you have filled all peppers to the top wrap them with 2 pieces of bacon each and lay them out on a flat cooking pan
- Preheat oven to 450 bake them in the oven for 20 min
- After you have pulled then out of the oven then broil the peppers on high for 1-3 min to brown the bacon
- For sausage and peppers rice chop sausage into small pieces along with diced onion and red and green bells
- Cook sausage bells and onion in oil or butter (about 1 cup) for 10 min on medium high heat.
- After ten minutes add rice and spices to the mix
- Next add beef broth and 1 cup of water to the rice mix bring to a high boil
- Once rice is tender and soft remove from stove and add cheese if desired.
