Cabbage Soup
- 1 lb. lean ground beef
- 1 Tbsp. olive or vegetable oil
- 1 clove garlic, minced
- 1 medium onion, thinly sliced
- 1 small head cabbage, shredded
- 1 medium carrot, diced
- 2 tsp. salt
- 1 tsp. whole peppercorns
- 1 bay leaf
- 2 c. beef broth
- 3 c. water
- 1 green pepper, diced
- 1 red pepper, diced
- 2 Tbsp. soy sauce
- chopped fresh parsley for garnish
- Brown ground beef in pan with oil.
- Add garlic and onion. Saute until meat loses its pinkness.
- Drain off fat, if any.
- Add cabbage, carrots, salt, peppercorn, bay leaf, broth and water. Heat to simmer.
- Cook until cabbage is tender, about 10 minutes. Add peppers and soy sauce.
- Simmer 5 minutes.
- Garnish with fresh parsley.
