Black Bean Salad
- 3 whole Red Peppers, Roasted And Diced, If You Don't Want To Roast Them Yourself You Can Get Some In A Jar
- 3 whole Ears Of Corn, Roasted And Kernels Removed
- 2 cups (dry Measure) Black Beans, I Soak And Cook My Own, But You Can Buy Them Canned
- 1 whole Purple Onion, Finely Diced
- 1 pinch Cumin
- 1 dash Lemon Juice
- 1 dash Extra Virgin Olive Oil
- Mix everything together, and season to taste.
- Dont forget the salt & pepper.
- You can use as much or as little lemon juice/oil/seasonings.
