White Bean Chicken Chili
- 2 Tbs olive oil
- 1 onion (chopped )
- 2 Tbs garlic (minced)
- 1 14.5oz can chicken broth
- 1 18.5oz can tomatillo (drained and chopped )
- 1 can diced tomatoes (14.5oz )
- 1 can diced green chilis (7oz)
- 1/2 tsp dried oregano
- 1/2 tsp dried coriander seed
- 1/4 tsp ground cumin (more for spice)
- 2 ears fresh corn
- 1 lb diced, cooked chicken meat
- 1 can white beans (15 oz) - great northern or cannelloni
- 1 tsp black pepper
- Use med/large soup pot on medium to high heat.
- Heat oil and cook onion until glossy.
- Stir in broth, Tomatillos, chilis, and spices.
- Bring to boil then simmer for 10 mins.
- Add corn, chicken, and beans and simmer 5 mins.
- Season with pepper and jot sauce to taste.
- Tip: For thicker chili mash or blend a portion before adding chicken.
