Quick-Comfort Egg Noodles and Cabbage
- salt
- 1 package curly wide egg noodles
- 1 tbsp. margarine or butter
- 1 tbsp. olive oil
- 1 jumbo onion
- 1 head savory cabbage
- 1/4 tsp. coarsely ground black pepper
- 1 tsp. fresh thyme leaves
- 1 package frozen peas
- 1 c. chicken broth
- 1/4 c. grated Parmesan cheese
- Fresh thyme sprigs for garnish
- Heat large saucepot of salted water to boiling over high heat; add noodles and cook as label directs.
- Meanwhile, in nonstick 12-inch skillet, heat margarine or butter and oil over medium heat until melted and hot.
- Add onion and cook 20 minutes or until onion is tender and golden, stirring occasionally.
- Increase heat to medium-high; add cabbage, pepper, thyme, and 3/4 teaspoon salt, and cook 5 minutes or until cabbage is tender-crisp and golden, stirring occasionally.
- Stir in frozen peas and broth; cook 2 minutes, stirring.
- Drain noodles; return to saucepot.
- Add cabbage mixture and Parmesan, and toss well to coat.
