Black Bean Soup

  1. Heat oil in medium stockpot over medium heat.
  2. Add celery, minced onion, and bell pepper.
  3. Cook about 10 minutes until tender.
  4. Add garlic and next 4 ingredients; cook 3 more minutes.
  5. Add broth, water, beans, and tomatoes.
  6. Bring to a boil; reduce heat, and simmer 15-30 minutes.
