Black Bean Soup
- 1 tablespoon olive oil
- 12 cup celery, diced
- 12 cup onion, minced
- 14 cup green bell pepper, chopped
- 3 garlic cloves, minced
- 1 12 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon fresh black pepper
- 2 cups vegetable broth
- 1 cup water
- 3 (15 ounce) cans black beans, rinsed and drained
- 1 (15 ounce) can diced tomatoes
- Heat oil in medium stockpot over medium heat.
- Add celery, minced onion, and bell pepper.
- Cook about 10 minutes until tender.
- Add garlic and next 4 ingredients; cook 3 more minutes.
- Add broth, water, beans, and tomatoes.
- Bring to a boil; reduce heat, and simmer 15-30 minutes.
