Stuffed Shells
- 12 oz. jumbo shells, cooked
- 3 c. diet cottage cheese or Ricotta cheese
- 2 c. (12 oz.) shredded Mozzarella cheese
- 3/4 c. grated Parmesan cheese
- 2 eggs, beaten
- 1 Tbsp. chopped parsley
- dash of nutmeg
- salt and pepper to taste
- 1 qt. favorite spaghetti sauce
- 1 lb. hamburger, cooked (optional)
- Cook shells.
- Mix the cottage cheese, Mozzarella cheese, Parmesan cheese, eggs, parsley, nutmeg, salt and pepper.
- Fill shells with cheese mixture.
- Cover bottom of 9 x 13-inch baking dish with thin layer of spaghetti sauce.
- Arrange stuffed shells in dish and pour remaining sauce mixed with meat over the shells. Cover baking dish with aluminum foil and bake at 350u0b0 for 30 minutes.
- Remove foil and sprinkle additional 1/4 cup Parmesan cheese (optional) over shells.
- Continue baking for additional 15 minutes or until bubbly.
- Serves 6 to 8.
