Sour Cream Raisin Recipe
- 1 (9 inch) pie shell
- 1 c. raisins (water sufficient to cover)
- 2/3 c. sugar
- 3 tbsp. cornstarch
- 1/2 teaspoon cinnamon
- 1 c. lowfat sour cream
- 3 egg yolks
- 1/3 c. lowfat milk
- 1/2 c. water (liquid removed off raisins)
- Place raisins in small saucepan.
- Add in water to cover.
- Bring to boil.
- Let stand.
- In heavy saucepan mix together sugar, cornstarch, cinnamon.
- Add in lowfat sour cream.
- Stir well.
- Beat in egg yolks.
- Stir in lowfat milk and cook over medium heat till pudding comes to boil.
- (Mix will be thick).
- Remove from heat.
- Drain raisins.
- Add in raisins and pour into pie shell.
- Top with meringue (if you like).
