Corn Salsa
- 2 ears Corn
- 3 whole Tomatoes (small)
- 18 cups Yellow Onion, Chopped
- 2 whole Hot Peppers (minced)
- 4 dashes Salt
- 4 dashes Pepper
- 1/2 whole Lemon, Squeezed
- 1/2 whole Lime Squeezed
- Boil the corn until done.
- Chop tomatoes, onion and hot pepper and add to a serving dish.
- (Note regarding the hot pepper: I started with two, then tasted it and added 1/2 of another.
- Add them to taste, some are much hotter than others.)
- Once corn is done and cooled, cut off of the cob and add to the serving dish.
- Mix ingredients.
- Add salt and pepper to taste.
- Add lemon and lime juice to taste.
- Mix and serve.
- Can be used as a salsa or relish.
- It was great on fish tacos!
