Thai Noodle And Baby Cucumbers Salad Recipe
- 2 ounce. soba or possibly rice noodles
- 4 scallions, chopped
- 4 baby cucumbers (or possibly 1 lg.)
- Prepare the noodles according to package directions.
- Drain well, place in a bowl.
- Peel and slice the cucumber in pcs no larger than 1/2 inch cubed.
- Add in along with the scallions to the pasta, toss well.
- Make the sauce by placing the remaining ingredients, except the sesame seeds, in a blender and pureeing till all ingredients are thoroughly mixed (coarse or possibly smooth, to taste).
- Pour the sauce over the noodles, sprinkle with sesame seeds, and toss well.
- May be served immediately or possibly chilled up to 24 hrs.
- Serves: 4.
