Summer Scramble
- 1 lb. ground beef
- 1 c. cooked macaroni
- 2 c. sliced or cubed squash
- 2 lb. tomatoes (retain juice)
- 1/2 c. red or green peppers
- 1 Tbsp. chopped onion
- salt and pepper to taste
- 1/8 tsp. ground peppercorns, crushed
- 1 tsp. fennel seed
- dash of hot pepper sauce
- grated cheese (optional)
- bread crumbs (optional)
- Cook macaroni. Scramble ground beef, pepper and onion in skillet.
- When cooked, add tomatoes and simmer 5 to 10 minutes. Add squash and seasonings. Steam for approximately 5 minutes or until tender. Add macaroni. If making casserole, alternate mixture with layers of shredded cheese and top with bread crumbs. Bake until cheese is melted and bread crumbs toasted. Tomato juice may be used if mixture becomes too dry. May be cooked in skillet without layering. Add any of your favorite vegetables (snow peas, green beans, etc.).
