Oatmeal Apple Cookies
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 12 teaspoon salt
- 14 teaspoon cinnamon
- 2 cups firmly packed domino dark brown sugar
- 1 cup butter or 1 cup margarine, softened
- 2 eggs
- 1 teaspoon vanilla
- 3 cups rolled oats
- 1 tart apple, peeled and finely chopped
- Preheat oven to 375.
- In small bowl, combine flour, baking powder, salt and cinnamon.
- In large bowl, combine brown sugar and butter; beat until light and fluffy.
- Beat eggs and vanilla.
- Add flour mixture and rolled oats separately to creamed mixture, blending well after each addition.
- Stir in apples.
- Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake 10-12 minutes or until lightly browned.
