Herbed Sweet Potato Biscuits
- 2 1/4 c. flour
- 1 Tbsp. baking powder
- 1/2 tsp. finely shredded lemon peel
- 1/4 tsp. baking soda
- 1/4 tsp. dried basil, crushed
- 1/4 tsp. thyme, crushed
- 1/2 tsp. salt
- 1 slightly beaten egg
- 1 1/2 c. finely shredded, peeled sweet potatoes
- 1/2 c. finely chopped green onions
- 1/2 c. sour cream
- 2 Tbsp. margarine, melted
- Stir together flour, baking powder, lemon peel, soda, basil, thyme and salt.
- Combine egg, potatoes, onions, sour cream and margarine; add to the dry ingredients.
- Stir just until moistened. On floured surface, put dough into an 8-inch square.
- Cut dough in half; cut each half crosswise into 8 strips.
- Place strips on a greased baking sheet.
- Brush with additional melted margarine. Bake at 425u0b0 for 20 minutes.
- Makes 16.
