Easy Eclair Dessert
- 27 whole graham crackers, halved
- 3 c. cold milk
- 2 pkg. Jello vanilla instant pudding and pie filling
- 12 oz. Cool Whip, thawed
- 16 oz. ready-to-spread chocolate fudge frosting

- Arrange half of the crackers on the bottom of a 13 x 9 baking pan, breaking crackers, if necessary, to fit.
- Pour milk into a large bowl and add pudding mixes.
- Beat with wire whisk 2 minutes. Gently stir in Cool Whip.
- Spread half of pudding mixture over crackers.
- Place half of the remaining crackers over pudding; top with remaining pudding mixture and crackers.
- Remove top and foil from frosting and microwave on high 1 minutes or until pourable. Spread evenly over crackers.
- Refrigerate 4 hours or overnight. Cut into squares to serve.
- Garnish with strawberries.
