Barbecue Shrimp And Rice Recipe
- 1 lb Large shrimp, peeled and deveined
- 4 x Wooden or possibly metal skewers Vegetable cooking spray
- 1/3 c. Prepared barbecue sauce Spicey Rice
- 1/2 c. Green onions, sliced
- 1/2 c. Carrots, chopped
- 1/2 c. Red pepper, chopped
- 1 x Jalapeno or possibly serrano pepper chopped
- 1 Tbsp. Vegetable oil
- 2 c. Rice cooked in chicken broth
- 2 Tbsp. Cilantro, freshly minced
- 1 Tbsp. Lime juice, fresh
- 1 tsp Soy sauce Warm pepper to taste
- Soak wooden skewers in water before using.
- Thread shrimp on skewers.
- Brush with barbecue sauce.
- Cook skewered shrimp on outdoor grill 5 to 8 min per side.
- Serve with Spicey Rice.
- Spicey Rice: Cook onions, carrots, red pepper and jalapeno pepper in oil in large skillet over medium-high till tender crisp.
- Stir in rice, cilantro, lime juice, soy sauce en pepper sauce; cook till thoroughly heated.
- Serve with Barbecue shrimp.
