Osa's Gooseberry Jam - Gooseberry Jam

  1. Wash and stem gooseberries.
  2. Mix sugar and red current juice.
  3. Boil 5 minutes.
  4. Add Gooseberries.
  5. Boil 45 minutes, skim now and then.
  6. Set aside overnight.
  7. Drain off syrup and reserve.
  8. Pack berries into jars.
  9. Boil down syrup until it's "thick as honey."
  10. Pour over the berries.
  11. Seal jars.
