Cheesy chicken bacon ranch dinner
- 1 packages medium size red potatoes
- 1 cup olive oil, extra virgin
- 1 tbsp oregano
- 1 packages diced cooked chicken. I get mine in the salad or frozen section
- 1 ranch dressing mix
- 2 cup Colby jack shredded cheese
- 1 1/2 cup real bacon pieces
- Preheat oven to 500
- Wash potatoes and dice them in cubes.
- Spay 9x13 pan with non stick cooking spray
- Get a bowl, pour in olive oil and ranch mix.
- Mix well
- Add diced potatoes and mix to evenly coat all
- Put in pan and sprinkle with oregano and bake for 1 hour stirring every 15 minutes till potatoes are crisp.
- While potatoes are cooking with remaining oil put already cooked diced chicken in and toss to coat.
- In another bowl mix cheese and bacon pieces
- When potatoes are done lower temperature to 400
- Put chicken mixture on top of potatoes then put cheese mixture on top of chicken
- Cook for 10-15 more minutes then you are done.
