Pineapple Coconut Pie
- 1 cup cold milk
- 1 (3 1/2 ounce) package vanilla instant pudding mix
- 12 cup flaked coconut
- 1 (8 ounce) can crushed unsweetened pineapple, drained
- 1 (9 inch) pastry shells, baked
- whipped topping, if desired
- in a mixing bowl, beat milk and pudding on low speed for 2 minutes.
- stir in coconut and pineapple.
- pour into pastry shell.
- chill for at least 2 hours.
- garnish with whipped topping, if desired.
