Shredded Chipotle Chicken

  2. Put chicken in the crock pot.
  3. Top with salsa, chopped chipotle peppers, and chili powder.

  5. Put lid on crock pot and cook on low for 8 hours.

  7. Remove meat from crock pot.
  8. Shred meat with two forks.
  9. Return chicken to the crock pot to soak up the juices.
  10. Let cook on high with the lid ajar for an additional 20 minutes.
  11. Serve with taco shells or tortillas, and all the fixings!
  12. Note: you can also use this meat as a burrito filling, pizza topping, or taco salad meat.
  13. This freezes very well!
