Seafood Marinara Recipe
- 1/3 c. minced onion
- 2 tbsp. extra virgin olive oil
- 1 lg. clove garlic, chopped
- 1/2 c. dry white wine
- 5 lg. fresh tomatoes, seeded & minced
- 2 tbsp. tomato paste
- 3/4 teaspoon dry basil
- 1/2 teaspoon dry oregano
- 1/8 teaspoon pepper
- 1/8 teaspoon salt
- 10 ounce. angel hair pasta or possibly linguine
- 1/2 pound scallops
- 1/2 pound shrimp
- 1 can minced clams, rinsed & liquid removed
- Saute/fry onion in oil in 3 qt saucepan over medium heat till soft (about 4 min).
- Add in garlic, cook 1 minute.
- Add in wine, cook till wine is evaporated 4-5 min.
- Remove from heat.
- Stir tomatoes, pasta, basil, salt, pepper and oregano into onion mix.
- Heat to boiling.
- Reduce heat to medium.
- Cook uncovered, stirring occasionally till sauce is thick, about 20 min.
- Stir in clams, shrimp and scallops.
- Cook uncovered, stirring occasionally till shrimp and scallops are cooked (about 20 min).
- Serve over pasta.
