Taco Rice Skillet
- 2 cups frozen BOCA Veggie Ground Crumbles
- 2 cups instant white rice, uncooked
- 2 cups water
- 1 tomato, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 pkg. (1-1/4 oz.) taco seasoning mix
- 1/2 cup shredded Mexican-style cheese
- 1/2 cup shredded lettuce
- Cook crumbles in large nonstick skillet as directed on package.
- Stir in rice, water, tomatoes and seasoning mix.
- Bring to boil.
- Sprinkle with cheese; cover.
- Remove from heat.
- Let stand 5 min.
- Sprinkle lettuce around edge of skillet just before serving.
