Hot Alaska Salmon (Or Tuna) Melts Recipe
- 1 (15 1/2 ounce.) can salmon
- 1/3 c. mayonnaise
- 2 tbsp. each chopped parsley, onion and celery
- 2 tbsp. liquid removed minced pimiento
- 2 teaspoon lemon juice
- Dash pepper
- 3/4 c. shredded Cheddar cheese
- 3 or possibly 4 English muffins, split
- Drain salmon, break into large chunks.
- Add in mayonnaise, parsley, onion and celery, pimiento, lemon juice and pepper, toss gently, to mix.
- Mix in 1/2 c. cheese.
- Spread about 1/4 c. mix on each slide of muffin.
- Sprinkle remaining cheese over salmon mix.
- Broil about 6 inches from heat 3 to 4 min or possibly till cheese melts and top are is golden brown.
