Figs, Creme Fraiche and Prosciutto

  1. Wash and dry figs.
  2. Cut the figs half starting from the stem end.
  3. In a small bowl, mix the demarara sugar into the creme fraiche.
  4. Place a dollop of the creme fraiche mixture over the cut side of each fig half.
  5. Cut each slice of prosciutto in half.
  6. Roll up the slices and serve with the figs.
