AMIEs Green Salad 2
- 1 head of any green vegetable leaves
- 1 small onion, sliced thin rounds
- 1 green apple, quartered, cored and thinly sliced
- 1 cucumber, sliced thin rounds
- 40 grams almonds, lightly toasted
- 40 grams extra virgin olive oil
- 2 tbsp lemon juice
- 1 salt and freshly ground black pepper, to taste
- 2 tbsp balsamic vinegar (optional)
- Whisk the oil and lemon juice together in a small bowl.
- Season with salt and pepper.
- Remove and discard the outer leaves of the vegetable.
- Roughly tear the washed leaves and place in a medium bowl.
- Put all the remaining ingredients together and mix well to combine.
- Pour the dressing over, drizzle with balsamic vinegar, if desired and toss to coat.
