Tatonuts (Doughnuts from the Bread Mix)

  1. Lightly grease 2 baking sheets.
  2. In a large bowl dissolve yeast in lukewarm water.
  3. Stir in eggs and butter.
  4. Add sugar, potato flakes and milk.
  5. Blend well.
  6. Add 4-1/2 cups bread mix and stir thoroughly.
  7. Add additional bread mix to make a soft but not too sticky dough.
  8. Turn out on a lightly floured surface.
  9. Knead approximately 5 minutes, until dough is smooth and satiny.
  10. Lightly butter bowl.
  11. Put dough in bowl and turn to butter top.
  12. Cover dough with a damp towel and let rise in a warm place until doubled in bulk, approximately 1 hour.
  13. Punch down.
  14. On a lightly floured surface roll out dough 1/4-inch thick.
  15. Cut with a floured doughnut cutter.
  16. Place on prepared baking sheets.
  17. Cover and let rise until doubled in bulk, 30 to 40 minutes.
  18. In a deep fryer or electric skillet, heat 1/2-inch of oil to 375F.
  19. Fry doughnuts approximately 1 minute on each side, until golden brown.
  20. Drain on paper towels.
  21. While still warm, brush doughnuts with vanilla glaze.
  22. Vanilla Glaze: Combine all ingredients and stir until smooth.
