Broccoli, Rice & Chicken Bake
- 2 cups instant white rice, uncooked
- 1-1/2 cups boiling water
- 1/4 cup MIRACLE WHIP Light Dressing Family Dollar $3.50 thru 02/07
- 4 small boneless skinless chicken breasts (1 lb.)
- 1 pkt. SHAKE 'N BAKE Chicken Coating Mix
- 1 can (14-1/2 oz.) diced tomatoes, undrained Safeway 1 lb For $1.29 thru 02/09
- 1/2 tsp. garlic powder
- 2 cups frozen broccoli florets
- 3/4 cup KRAFT 2% Milk Cheddar Cheese
- Heat oven to 400F.
- Combine rice, boiling water and dressing in 8-inch square baking dish; cover.
- Let stand 5 min.
- Meanwhile, coat chicken with coating mix as directed on package.
- Add tomatoes and garlic powder to rice mixture; mix well.
- Top with broccoli and chicken.
- Bake 45 min.
- or until chicken is done (165F).
- Sprinkle with cheese; bake 5 min.
- or until melted.
