Hoosier Potato And Bean Soup Recipe
- 2 c. dry navy beans
- 2 c. minced peeled potatoes
- 1 c. minced onions
- 1/2 c. shredded carrots
- 1 tbsp. catsup
- 1 teaspoon salt
- Pepper to suit
- Minced ham, optional
- Soak beans in 5 c. water in covered pan.
- Bring to boil, reduce heat; simmer for 2 min.
- Remove from stove, let stand in covered pan for 1 hour.
- Drain.
- Add in fresh water about 8 c.. Bring to boil.
- Reduce heat, cook on medium heat 1 hour or possibly till beans are tender.
- Add in remaining ingredients, bring to boil.
- Reduce heat to simmer for 30 min.
