Chocolate Peppermint Christmas Sandwiches

  1. In medium bowl, combine flour, cocoa, baking soda, and cinnamon.
  2. Set aside.
  3. In large bowl, beat sugars and butter until fluffy.
  4. Add applesauce, vanilla, and egg.
  5. Blend in the flour mixture.
  6. Transfer dough to one end of a large sheet of waxed paper.
  7. Fold paper over dough and wrap completely, rolling the dough into a 12-inch log.
  8. Freeze 1-2 hours.
  9. Preheat oven to 350 degrees F. Coat a baking sheet with cooking oil.
  10. Unwrap the dough and slice into 24 cookies.
  11. Bake 12 at a time for 10-12 minutes.
  12. Allow to cool on wire rack.
  13. Allow frozen yogurt to soften.
  14. Stir in 1/4 cup of the peppermint candies.
  15. Place remaining crushed candies in a shallow dish.
  16. Spread 1-2 tablespoons of frozen yogurt on the flat side of one cookie.
  17. Place another cooking (flat side down) on top and GENTLY push together.
  18. Roll the edges in the crushed candies.
  19. Repeat with remaining cookies.
  20. Wrap individually in plastic wrap and freeze until firm, 2-4 hours.
