Cider Salad Mold
- 4 c. apple cider or juice
- 3 whole cloves
- 1 large cinnamon stick
- 2 pkg. (3 oz. each) lemon flavored gelatin
- 1 can (11 oz.) mandarin orange sections, drained
- 1 apple, cored and sliced
- 1 apple, cored and chopped
- In medium saucepan, bring to a boil cider, cloves and cinnamon. Reduce heat to low.
- Simmer 15 minutes; strain.
- In medium bowl, stir hot cider mixture into gelatin until gelatin dissolves.
- Pour 1 cup into 6-cup mold.
- Chill until consistency of unbeaten egg whites.
- Set remaining gelatin aside at room temperature.
- Arrange orange sections and apple slices in partially set gelatin.
- Chill until firm.
- Meanwhile, chill remaining gelatin mixture until consistency of unbeaten egg whites.
- Gently stir in chopped apple. Spoon into mold over orange layer.
- Chill until firm.
- Unmold on serving dish.
- Garnish as desired.
- Makes 12 servings.
