Chicken Taco Casserole
- 1 fryer (or 4 large chicken breasts), boiled
- 1 large onion, diced
- 1 stick oleo
- 1 can Ro-Tel tomatoes
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 c. chicken broth
- 1 pkg. enchilada mix
- 1 large pkg. taco flavored Dorito chips (or 1 pkg. flat tortillas, 12)
- Cheddar cheese (as desired)
- Boil chicken, skin and debone;taute onions in butter; add enchilada
- mix
- and all liquids.
- Cook until it thickens. In
- a casserole, layer chicken and Doritos;
- cover each layer with sauce
- andtheese.
- Repeat
- until all is used.
- Bake at 350u0b0 for 30 minutes.
- Top with cheese.
- If tortillas are used, heat them one
- at
- atime in a small amount of Wesson or any cooking oil, just long enough to soften;
- drain and layer same as Doritos.
