Tomato Ketchup
- 4 c. chopped fresh or canned tomatoes (no salt)
- 3/4 c. tomato paste
- 2 c. chopped onions
- 1 sweet green pepper, cut into 1/2-inch cubes
- 1/4 c. brown sugar
- 1 large bay leaf
- 1/4 tsp. cloves (ground)
- 1/4 tsp. ground pepper
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground mustard
- 1 tsp. finely minced garlic
- 1/4 tsp. ground mace
- 1/4 tsp. ground allspice
- 1/4 c. malt vinegar
- Combine tomatoes, tomato paste, onions and green pepper in saucepan. Simmer 30 minutes.
- Empty tomato mixture into food processor or blender.
- Blend thoroughly.
- Return to saucepan. Add other ingredients. Bring to a boil. Simmer 10 minutes.
- Stir often.
- Yields about 5 cups.
