African-Spiced Vegetable Salad
- 3/4 c. fresh broccoli florets
- 3/4 c. small fresh cauliflowerets
- 1/2 c. (1/4-inch) diagonally sliced carrot
- 1/4 tsp. salt
- 1/4 tsp. crushed red pepper
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cumin
- 1/8 tsp. ground coriander
- 1/8 tsp. ground nutmeg
- 3 Tbsp. fat-free sour cream
- 2 tsp. cider vinegar
- 1/2 tsp. honey
- 2 Tbsp. sliced green onions
- Steam first 3 ingredients, covered, 2 minutes. Rinse under cold water; drain well. Combine salt and next 5 ingredients in small skillet. Place over medium heat 2 minutes or until fragrant, stirring constantly. Combine spice mixture, sour cream, vinegar and honey in medium bowl. Stir well. Add broccoli mixture and green onions; toss well to coat. Yields 2 servings of 1 cup each.
