Brown Sugar Oat Muffins
- 1 cup old fashioned oats
- 1 cup whole wheat flour
- 34 cup packed brown sugar
- 12 cup all-purpose flour
- 2 teaspoons baking powder
- 12 teaspoon salt
- 2 eggs
- 34 cup 2% low-fat milk
- 14 cup canola oil
- 1 teaspoon vanilla extract
- In a small bowl, combine the first six ingredients.
- In another small bowl, beat the eggs, milk, oil and vanilla.
- Stir into the dry ingredients just until moistened.
- Fill greased or paper-lined muffin cups two-thirds full.
- Bake at 400 for 15-17 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 5 minutes before removing from pan to a wire rack.
- Serve warm.
