Pumpkin Loaf
- 4 eggs
- 2 cups sugar
- 1 12 cups oil
- 2 cups canned pumpkin (reserve 3 tbsp for glaze)
- 3 cups flour
- 1 12 tablespoons cinnamon
- 1 12 teaspoons ground ginger
- 1 teaspoon ground nutmeg
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- glaze
- 6 tablespoons butter (softend)
- 3 tablespoons pumpkin
- 2 12 tablespoons icing sugar
- 1 pinch salt
- 34 teaspoon cinnamon
- 3 tablespoons milk
- 1 12 teaspoons vanilla
- Mix dry ingredients together and in separate bowl mix wet ingredients together and pour wet into dry, do not over mix or loaves will be heavy, ( batter will be thick).
- spray pans with cooking spray.
- divid batter into two pans
- bake at 350 degrees for 50-60 minute.
- remove from pans and while still warm but not hot spread glaze over top.
- slice and enjoy.
