Apala Recipe
- 7 x Granny Smith apples
- 1 c. Sugar
- 2 c. Water
- 1 Tbsp. Lemon juice
- 1/4 tsp Vanilla extract
- 1/4 c. Apple juice
- 2 Tbsp. Sugar
- 2 tsp Applejack brandy
- 1 1/2 tsp Apricot brandy
- 1 1/2 tsp Dark rum
- 1/4 c. Heavy cream, whipped
- 1/8 tsp Green food coloring
- Peel and core 6 of the apples.
- Combine 1 c. sugar with water and lemon juice and bring to a boil.
- Add in apples, simmer and baste 8 to 10 min till apples are tender.
- Remove apples from syrup.
- Cold and then chill.
- Peel and core remaining apple.
- Cut into cubes and put in small saucepan with vanilla, apple juice and 2 Tbsp.
- sugar.
- Simmer 15 to 20 min till apple is soft and any liquid is evaporated.
- Puree apple in blender.
- Cold.
- Add in applejack brandy, apricot brandy and rum.
- Mix in whipped cream and food coloring.
- Fill into center of poached apples.
