Creamy Veggie Soup

  1. Soak broccoli in water untill thawed.
  2. Drain green beans and asparagus.
  3. Saute carrots, celery, onions and garlic untill soft.
  4. Add green beans, asparagus, and broccoli.
  5. Cook 2-4 minutes Add salt, pepper, and red pepper flakes.
  6. Add 1/2 cup flour to make a roux, cook 1-2 minutes.
  7. Add 1-1/2 cups milk and cook untill thick.
  8. Add 1/2 cup cheddar cheese.
  9. Puree in blender untill smooth and there are no chunks.
  10. Return to pot.
  11. Season with salt and pepper.
