Creamy Veggie Soup
- 1 -2 carrot, chopped
- 1 -2 stalk celery, chopped
- 1 cup frozen broccoli
- 1 (8 ounce) can French style green beans
- 12 an onion, chopped
- 1 (8 ounce) can asparagus
- 3 garlic cloves, finely chopped
- 12 teaspoon red pepper flakes
- 12 cup butter
- 12 cup flour
- 1 12 cups milk
- 12 cup cheddar cheese
- Soak broccoli in water untill thawed.
- Drain green beans and asparagus.
- Saute carrots, celery, onions and garlic untill soft.
- Add green beans, asparagus, and broccoli.
- Cook 2-4 minutes Add salt, pepper, and red pepper flakes.
- Add 1/2 cup flour to make a roux, cook 1-2 minutes.
- Add 1-1/2 cups milk and cook untill thick.
- Add 1/2 cup cheddar cheese.
- Puree in blender untill smooth and there are no chunks.
- Return to pot.
- Season with salt and pepper.
